As many a great person has said, “Everything tastes better with an egg on top.” Although I can come up with a few things that WOULDN’T be better with eggs anywhere near them (read: chocolate bar, lemonade, watermelon..), I can come up with even more that would be taken over the top with an egg sitting majestically on it (noodles, hamburger, pizza, sandwich etc.) or with eggs within it (cake, ice cream, custard, french toast).
I think fried egg-soaked bread is, like, the best breakfast ever. I can have it sweet, savoury, plain. It’s amazing how fragrant it gets when it’s frying! And the best part is, I can prepare it the night before and leave the bread soaking in the fridge so that all I have to do in the morning is to heat up a little butter and fry them. Instant breakfast in barely 15 minutes!
Also, It helps to use up leftover stale bread. French toast only works with stale bread. Fresh bread just turns to mush when it is soaked in the custard mixture. Whereas, stale bread is harder and holds up perfectly. I somehow always have some stale bread hanging about in my freezer.
To make this, I only need:
Mixed Seed Bread, Eggs, Butter, White Sugar, Allspice & Milk
Let the soaking begin! It may seem like there is a puddle at first but given a little time, everything will get slurped up by the bread.
I like to use butter to fry these but you’d really have to watch to ensure the butter doesn’t burn. Alternatively, coconut oil would be excellent as it has a higher smoking point as well as great flavour.
I served this 2 ways. First of which is one of my favourite. What’s there not to love?
To me, French toast qualifies as breakfast, dessert, supper…. even lunch or dinner. Eggy bread cannot dissatisfy. And the smell when they are frying! If they made an air freshener for homes with that scent, get me one please! Or ten.

Seeded French Toast
serves 2 (about two slices each)
5 thick slices Seeded Boule (or any kind of firm bread), at least day old
2 tbsp White Sugar
1 tsp Allspice Powder
1 cup Whole Milk (or cream)
3-4 tbsp Butter (or coconut oil)
Nutella & Powdered/Icing Sugar
Fruits and Berries & Honey
- Beat eggs in a large deep dish (make sure bread fits the dish nicely).
- Add sugar, allspice & milk and beat well.
- Press down bread slices into the custard mixture and let it sit for at least 15 minutes, up to overnight.
- To fry, melt butter over MEDIUM LOW heat.
- Gently place in soaked bread, making sure not to crowd the pan.
- If need be, increase the heat but watch so that butter does not burn.
- Flip over when sufficiently browned.
- Serve up with your favourite topping! Mine is Nutella 😉
