Old Cucumber Soup

It’s hot here, you guys. It’s really really hot! As I am writing this, spells of haze have been cropping up. It hasn’t really properly rained and the average daily temperature is at about 37-39 C. That would translate to about 100 F to those of you who use the imperial system.

Maybe this isn’t that bad to many (like Singapore and Johor which are facing even worse smog) but I can barely handle it. My throat has gotten slightly scratchy and my face is breaking out. Bad. So my remedy is to consume as much water as I can and indulge in as many cooling and refreshing beverages as I can get my hands on.

And soups. As strange as this may sound, I find that soups (the brothy kinds) using winter melon, daikon or napa cabbage can help to cool my insides. Although the soup is hot, the ingredients help with alleviating inflammations and general body discomforts from the hot weather. I cannot prove that though. 😉 My grandma and mom told me the same thing so i take their word for it. Seems to work so far!

PS: I loaded up on the dried oysters because traditionally, this soup is made using dried cuttlefish which is super high in cholesterol. To imitate similar sweetness that comes from a seafood product, dried oysters are a good alternative. If you can’t get dried oysters, fish sauce gives a similar pungency and savouriness.

Ingredients include: Pork Shoulder Bones, Old Cucumber, Garlic, Dried Oysters, Red Dates (Jujube), Solomon’s Seal (Yuk Chuk), Goji Berries (Kei Chi), Salt & Water

Before anything happens, I must must must always get the meat blanched. Blanching gets rid of any smells or surface bacteria. Then deseed the old cucumber and cut it into slices.Old Cucumber Soup 2

Finally, I dunk everything into the pot, add water and boil.Old Cucumber Soup 3

As unassuming as it looks, this soup is really light and sweet from the old cucumber. It also has a good dose of umami from the oysters. Old Cucumber Soup 6

Just a very refreshing soup to enjoy on hot days. I cannot make this enough.Old Cucumber Soup 5

PS: No, keeping regular cucumbers around long enough would not turn them into old cucumbers. 😉

Old Cucumber Soup
serves 8-10


1/2 lbs or 250 gms Pork Shoulder Bones, blanched
1 Old Cucumber, deseeded & cut into 1 inch slices
1 bulb Garlic, peeled
2 tbsp Dried Oysters
2 tbsp Goji Berries (kei chi)
4 Red Dates (jujubes)
3-4 Solomon’s Seal (yuk chuk)
1 tbsp Salt
6 cups Water

  1. Place all the ingredients in a pot and bring to a boil. Reduce to a simmer for 1 hour.
  2. If you are using a crock pot like me, bring water to a boil on the stove first. Pour water into the crock pot over all the other ingredients. Boil on HIGH for 4 hours or LOW for 6-8 hours.
  3. Serve!
