I took it as a sign. I had been thinking hard for the past few months wondering which direction I should take this blog towards. Will it remain a mere hobby or do I want to get serious? I guess you know now! It wasn’t easy figuring things out but with the help of my lovely designer and the friendly folks at Web Hosting Hub, I somehow managed. Yay!

To celebrate this new phase of Tenacious Tinkering blog experience, I decided to spread the joy with a little giveaway. 🙂 And an international one too! More about it after today’s recipe.

So you know we love roasted potatoes over here. As evidenced from here, here & here. I keep trying to find new ways to enjoy our potatoes. With some dill I have in the fridge, I thought it might be a good idea to mix it with some roasted potatoes and I wasn’t wrong.

This is really really simple. All we need is some Potatoes, Olive Oil, Salt, Pepper, Dill, Lemon Juice & Grated ParmesanDill Roasted Potatoes 1

We start by basic roasting of the potatoes with  good drizzle of olive oil, salt and pepper. Skin on please. I like the chew factor.Dill Roasted Potatoes 2

Once they’re done roasting, into a bowl they all go.Dill Roasted Potatoes 3

This is where the fun begins. Lemon juice, dill and cheese is tossed into the hot hot potatoes.Dill Roasted Potatoes 4

The cheese gets super melty because that fabulous grater gets it wispy thin. Melty cheese helps them dill leaves to stick to every piece of potato.Dill Roasted Potatoes 5

That anise, lemony fragrance and flavour went so well. Potatoes are bland on their own. We know that. With cheese and dill, it makes this a pretty fancy tasting side dish.Dill Roasted Potatoes 6

Love that they are nice bite size pieces too. I could snack on these all day. Can’t live without this… or that zester.Dill Roasted Potatoes 7

When I first got my fine grater about over a year ago, I thought it was just one of those luxurious kitchen tools that I might use, like, once a month when I remember I have it somewhere. You know, like the melon baller or anything in this article (banana slicer? Really?!?).

But before I realize it myself, I started grabbing my Tescoma fine grater a couple times a week for cheese, lemon zest, nutmeg grating… it became an indispensable tool in my kitchen. And I think you should have one too! While I would love to giveaway the same Tescoma grater that I use, I found that they do not distribute as widely as Microplane.

Dill Roasted Potatoes
serves 2 (in my house 😉 )

Ingredients:

2 large Russet Potatoes, scrubbed clean and cut to inch cubes
2 tbsp Olive Oil
2 tsp Salt
1/2 tsp ground Black pepper
2 sprigs Dill
1/4 cup grated Parmesan
1 tsp Lemon Juice

  1. Preheat oven to 400 F or 200 C.
  2. Toss potatoes into an oven safe pan and mix in oil, salt & pepper. Roast for 30 mins until golden brown on edges and fully cooked & tender.
  3. Pour roasted potatoes in a bowl. Mix in stripped dill leaves, Parmesan & lemon juice.
  4. Serve on a pretty plate and snack on them :-).

    Hi my favourite animals are dogs (my cavalier king charles) because they are so loving and affectionate. My fav kitchen appliance is my hand mixer as it is great for whipping up cakes. As for the weather… not to hot and not to cold I like a happy medium (just right).
    Thankyou for the chance to win the zester it would be great to win as me and my family have gone mad on lemon drizzle cakes… looks perfect for zesting the lemons.
