It’s that time of the year when Medjool dates overflow supermarket bins and shelves! Tons and tons and tons of dates of all sorts and kinds. Every single year, I’d skirt around the idea of getting some and then chicken out because I have NO idea what to do with them besides eat. Knowing me, though, I might stash them at the back of my fridge and they’d never see daylight again.

This year, however, I decided I’d get myself one box and see what I would come up with. Not before munching on at least 8 beforehand. Those I got were really moist, squidgy and totally not dry. Like candy!

So when I found a recipe that paired these dates with orange juice, I had to try it out. The one part that I appreciated most was that it used honey, not sugar. Those dates are naturally super sweet and so I loved that this recipe used very little honey too!

These muffins used mostly pantry baking items. Flour, Baking Powder, Baking Soda, Honey, Melted Butter, Orange Juice, Egg, Chopped Dates & Chopped Walnuts

And the main stars! I firstly tried to cut them dates with a knife but because they were so moist, they turned to mush. Switching to scissors worked perfectly! Pro-tip there for you.

The batter is rather thin but that’s why it works.

Biting into one of these warm was awesome. I loved it with a hot cup of tea to balance out the fruity sweetness of these muffins.Orange Date Muffin 8

Recipe type: Dessert
Serves: 12 muffins
  • ½ cup orange juice
  • 1 egg
  • ½ cup butter, melted
  • ½ cup honey
  • 1¼ cup flour
  • ¼ cup oat bran
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ cup dates, chopped
  • ½ cup walnuts, chopped
  • ¼ tsp mixed spice
  1. Preheat oven to 375 F or 180 C.
  2. Mix the first 4 ingredients in a bowl.
  3. Sift the dry ingredients together into a separate bowl.
  4. Combine the wet and dry ingredients with the dates and walnuts.
  5. Divide the batter between 12 greased or paper lined muffin tins and bake for 15 minutes.
  6. Cool and serve.
Feel free to substitute flour & oat bran with 1 cup flour & ½ cup whole wheat flour.
