Packed Lunch #12: Blueberry Granola Parfait

After that lasagna 2 days ago, you’d want something healthier. I know I do. Lasagna is delicious but that can be rather heavy to have everyday. A lot of times after heavy dinners, I try to have lighter meals the next day just to make myself feel better. haha!

Let’s be honest though. Parfait is not a recipe. It’s assembly. Assembly that only requires 2… at most 3 ingredients. Also, let me say how much I LOVE this muesli! It’s so crunchy, fruity and smells so so good.

I layer it using Greek yogurt (PS: I did this 2-3 months ago so I didn’t hand expired yogurt. Just so y’all are clear. tee hee!) Also, I just realized that lasagna is also a layered dish. 2 layer-type meals but so so different!

And top with them blueberries.

That pack of muesli goes with 5-6 servings though. I need a jumbo pack. And another jar of Greek yogurt.

Do you try to eat lighter the day after say… Thanksgiving or Chinese New Year?

I know I try. Until the next pasta dish or cake comes and tempt me.
