Lemongrass Syrup

The weather these days are hot, hazy, dusty… and with the current water rationing happening here, it sometimes feel a little crazy. Today, the water supply at my workplace was cut off without much prior notice. It would be that 2 days on-2 days off type of rationing. The water pressure at home is low. It rained proper once in 2 months. We’re living in a desert here, people!

In conditions like this, we fill up every tub in the house and workplace when we can… and we make ourselves cool drinks as much as we need to.Water

Hubs would ask for something to cool himself and I’d make grass jelly, chrysanthemum tea, cinnamon drink, soda lemonade or Lemongrass Syrup

This is so easy and quick. Just some rock sugar (I used some extra white sugar because I didn’t have enough rock sugar), fresh lemongrass and water. That’s it!

After some 10 minutes of simmering and steeping, the drink is done!

A few drops of lemon juice adds an extra zing.

Hubs love this with a few cubes of ice. I can totally take this warm. There’s no stopping me when I want something.

Lemongrass Syrup

Recipe type: Drinks
Serves: makes 1.5 cups syrup
  • 2 stalks fresh Lemongrass, white parts crushed
  • 2 pieces Raw Rock Sugar (or 1 cup Sugar)
  • 2 cup Water
  • 1 wedge Lemon (optional)
  1. Place lemongrass, rock sugar & water into a sauce pot.
  2. Bring to a boil & reduce ti a simmer for 5 minutes.
  3. Cover and leave to steep for another 5 minutes.
  4. Cool completely before storing in a glass jar.
  5. For every cup of lemongrass drink, use 2-3 tbsp syrup and top with water. Add a squeeze of lemon juice.
  6. Quench your thirst!
**This makes a sweet syrup. You need to add water to this before consuming.
