Wild Rocket Frittata Sandwich

I came across the above graphic and thought I’d share! I’m one of those people who are terrible at waking up earlier to make breakfast. Even if it takes an extra 5 minutes. Off late, I’ve been trying to do so as much and as often as I can. A small slice of toast makes such a big difference! It staves of the hunger pangs that come the moment I’m at my work desk, prevents me from eating too much for lunch & gives me energy to keep going through the day. I dare say that breakfast is better fuel than coffee! (Don’t stone me, coffee connoisseurs!!)

I’ll be posting some breakfast ideas in the coming weeks that can either be made ahead of time or very quickly in the morning. Let’s just start with this Wild Rocket Frittata Sandwich!

I snipped a few salad leaves from the garden for the frittata. 🙂 I feel kinda great saying that. Heh. Thing is, I planted a mixed salad leaves seed pack and can only identify Wild Rocket. Any of you guys know what the other leaf is? Spinach? Another variety of rocket? Either way, they were both fresh & delicious for sure!

My garden rocket, cherry tomatoes & chopped turkey ham became fillers.

Fried in some butter & piled atop a nicely toasted bread, this makes a really balanced and quick breakfast!

I’m sure anyone can toss some stuff in a pan & pour beaten egg in, right?

Wild Rocket Frittata Sandwich

Recipe type: Breakfast
Serves: 1
  • 2 slices Sandwich Bread (any type - I used whole wheat)
  • 1 Egg, Beaten
  • 4-5 Rocket Leaves, roughly chopped
  • 4 Cherry Tomatoes, quartered
  • 1 slice Ham, chopped (I used turkey ham)
  • 1 tbsp Butter
  • Salt & Pepper
  1. Toast the bread.
  2. Meanwhile, melt butter in a small frying pan in MED heat.
  3. Once butter just melts, toss in cherry tomatoes, ham & rocket leaves. Toss around around to warm through briefly.
  4. Beat pinch of salt & pepper into egg then pour egg into the pan.
  5. Leave to brown and solidify. Flip over the best you can. Frittata will fall apart with the amount of filling in there.
  6. When done to your liking, pile over toasted bread & enjoy with a cup of java!
I used a little over 1 cup of filling per large egg.
