Spice Roasted Purple Sweet Potato & Broccoli (with ESSIE Spice)

I’ve been unwell for the past few days and cooking is just…. ugh. Just because I haven’t got much of an appetite doesn’t mean I don’t cook though. There’s a husband to feed and then there’s medicine that can only be taken after meals. So regardless, food is gonna have to get made to feed us both.

Roasting veggies is just about the simplest way to dunk everything into a pan, turn on the oven, go lie down a bit, then DING! Veggies done. I did all of that, in that order. Even though I’m not well, I still want my food to taste and smell good. ESSIE Spice just does that for me. A few months ago, I took part in an Instagram competition & then won a sampler spice pack from Essie! I’ve tried every one of them and LOVED them so so much. Essie wasn’t stingy too. Those jars are big.

With this Meko Dry Rub, it’s so versatile and complex. This African spice blend is gorgeous! I’ve used it on salmon & it went really well. There are probably a combination of 20 over spices in that one jar alone so all the work is already done for me.  Salt, pepper & Meko Dry Rub on there. That’s it!

Turns out, with it works good with veggies too. I like it especially with veggies that have got a lot of nooks like broccoli so the spices can get all up into it.  Some sweet potato, onion & garlic adds flavour & bulk.

A good blend with some Meko, salt & pepper before the olive oil is drizzled in.

This would be a really basic & simple side dish to prepare for your year end family gatherings! If you’re making some complicated turkey main dish, you’d need easy side dishes that require little brainwork & can be prepared moments before dinner begins without issue. The Meko Dry Rub elevates to another beautifully spiced level.

Spice Roasted Purple Sweet Potato & Brocolli (with ESSIE Spice)

  • 1 head Brocolli, cut into bite size florets
  • 1 Sweet Potato (I used the purple variety), cut into fries
  • 3 cloves Garlic, smashed
  • 1 Yellow Onion, peeled, halved & cut into half moons
  • 1 tsp Meko Dry Rub
  • ¼ tsp freshly ground Pepper
  • ½ tsp Salt
  • 3 tbsp Olive Oil
  1. Preheat oven to 375F or 180C.
  2. In a small bowl, mix together Meko dry rub, salt, pepper & olive oil.
  3. Scatter veggies, garlic & onion on a 9 x 13 roasting dish. Best to keep them in 1 layer to ensure even cooking.
  4. Pour in spice + oil mix & stir evenly until the mix coats all the veggies.
  5. Roast in the oven for 25 minutes or until sweet potato fries are cooked through.
  6. Remove from oven & serve immediately with a slice of lemon if preferred.
