Brussels Sprouts with Crispy Onion

HAPPY 2015!!

It’s a brand new year with brand new beginnings & brand new opportunities. Who knows what will happen this time around. It’s the last year of my 20s. A little bit of a reality check to realize how fast my 20s zoomed past. Will the 30s be as quick & unpredictable? The Lord will be my guide. 🙂

Anyway, that aside, let’s talk Brussels sprouts. It’s still a good time to enjoy them, I know. Even though I’ve just shared a recipe featuring these perfect morsels, I HAVE to share another because I can’t resist getting more.

I love quick searing them for some browning but before that, something chewy & crunchy to top them off!

What’s better than some crispy onion strings?

In the same pan, I like to sear the sprouts off with a nice squeeze of lime juice & a splash of water. I find that a bit of fruity acid helps cut through the richness of these little heads.

For a little bit of colour, cherry tomatoes is it.

Then merge the components together.

Such a simple way to enjoy the sprouts in barely 15 minutes.

Brussels Sprouts with Crispy Onion

Serves: 4 (or 2 in my household)
Ingredients
  • 125 g (4.5 oz) Brussels sprouts, washed & halved
  • 8-10 Cherry Tomatoes, halved
  • 1 White Onion, peeled & thinly sliced
  • 2 tbsp Canola Oil
  • 1 small Calamondin Lime (Limau Kasturi), juiced Or 1 tbsp Lemon/Lime juice
  • 2 tbsp Water
  • Salt & Pepper
Steps
  1. Heat oil in a flat based pan on MED HIGH.
  2. Fry sliced onion, stirring constantly, until brown & mostly crispy. Drain with colander & set aside.
  3. Arrange Brussels sprouts, cut side down, on the same pan. Leave to brown for 1-2 minute.
  4. Juice the lime directly into the pan & splash in the water. Cover & leave to steam for 1 minute.
  5. Toss in a pinch of salt & pepper. Add in cherry tomatoes. Stirfry for 1 minute.
  6. Test to see if sprouts are cooked through but still crunchy. Adjust seasoning with salt, if necessary.
  7. Pour in a plate & top with fried onions. Serve warm!

    • Haha… It’s a weird thing thinking that 2015 as the last year of my 20s. Maybe I should consider it the prep year for my 30s! 😀 Have a lovely 2015 yourself! Hope your condo is all lovely and ready soon. Can’t wait to read more about it.
