Roasted Broccoli Salad

I woke up one day craving salad. Roasted broccoli salad to be precise. Is that weird? Maybe it was because I bought broccoli the day before and Mom brought over a wedge of White Stilton with Apricot. My brain was working on overdrive before bed.. so I woke up wanting to mash both of that together in a dish.

Strange how inspirations happen. Also yes, I know it’s Valentine’s Day today. Plenty of pink hearts, heart shaped things, heart of hearts all over the internet. I’ve never been a Valentine’s Day kinda girl so… salad? It’s good for you. And I’ve already made you a cake with the word PASSION in it so I think I’m off the hook. 😀

In this pretty pretty salad, nothing more than broccoli and a bit of seasoning is needed.

It’s all in one pan and then go.

Well coated with oil so things don’t get dry in the oven.

And in 15 minutes, a pan of roasted veggies.

I wanted to enjoy this as an appetizer or light lunch so I tossed in cubes of White Stilton with Apricot. I don’t think this kinda cheese grates well with fruits all up in there. I like to have a bite of crunch, then a bite of creamy; a bite of nutty, then a bite of fruity.

Roasted Broccoli Salad

Ingredients
  • 1 head Broccoli, cut into smaller florets
  • 3-4 cloves Garlic, skin left on but woody root end sliced off
  • 12 Cherry Tomatoes
  • 2 oz White Stilton with Apricot, cut into small cubes
  • 2 tbsp Olive Oil
  • Salt & Pepper
  • Wedge of Lime
Steps
  1. Preheat the oven to 180C or 375F.
  2. Toss broccoli florets, garlic & tomatoes in olive oil, a bit or salt and some pepper. Make sure everything is coated with oil.
  3. Roast for 15 minutes or until broccoli is tender.
  4. Remove pan from oven & serve in plate.
  5. Drop cheese cubes around the vegetables & serve!
