Luffa Chicken Soup

I snooped into my food pictures folder again and found another old recipe that I’ve never shared. With the heavy rain going on outside right now, we can do with like 5 bowls of this!!

The best thing about this particular soup is that it takes under 30 minutes to prepare, making it very suitable for work nights. I don’t even need another dish. We have the vegs, proteins & broth. Oh, even some tofu. I mean, if I’m really hungry, I could throw in a handful of noodles or rice but nahhhh… This is perfection.

This soup calls for so few ingredients, all very cheap and easy to find. Totally budget friendly. 🙂
Luffa Chicken Soup 1

I like to start out by boiling some chicken thighs in water to make some soup base first. All that takes about 20 minutes until the chicken is cooked through. Then the rest of the ingredients, namely, peeled & sliced Luffa, cubed Firm Tofu & beaten Eggs, go in for about 5-8 minutes.

I have been having a case of the cold for the past 2 weeks and haven’t really gotten it treated besides sipping on hot peppermint tea every now and again. I feel like a couple bowls of this hot soup is going to do wonders.

Ingredients
  • 4 small Chicken Drumsticks
  • 4 cups Water
  • 1 tsp Salt
  • pinch of ground Black Pepper
  • 5 Red Dates (Optional)
  • 1 tbsp Goji Berries (Optional)
  • 1 tbsp Dried Scallops (can sub with ½ tsp Fish Sauce)
  • 1 Luffa/Petola, peeled & sliced into 1 inch coins
  • 1 Firm Tofu, cubed
  • 2 Eggs, beaten
Steps
  1. In a medium stock pot, place chicken, water, salt, red dates, goji berries & dried scallops. Bring to boil then simmer for 20 minutes.
  2. Meanwhile, prepare other ingredients.
  3. Once chicken is cooked, add in tofu & luffa. Simmer for 5 minutes.
  4. Turn heat to MED HIGH. Drizzle in beaten egg in a steady stream.
  5. Turn off heat & serve!
