Fluffy Pancakes

Whenever we have overnight guests over, I feel like I should serve up a nice breakfast. No, it’s not like I am pressured to impress or anything. I just want to do something a bit special for both my guests and hubs because hosting, while fun, can be a little tiring. To have a nice breakfast revs us all up and helps us get going for the day.

Pancakes feel like a good boost as we like to take our guests out, either sight-seeing or shopping. They are filling, sweet and super comforting in the morning.

 Even before this first batch was done, I knew they would be sooooo soft.

 Thing is, this batter is so easy to pull off. In half an hour, it’s done with no sweat.

 Best part is this recipe doesn’t make a million pancakes like so many other recipes I’ve tried. Just the right amount to satisfy without overwhelming.

Serves: 8-10 pancakes
Ingredients
  • ¾ cup Milk
  • 2 tbsp Apple Cider Vinegar
  • 1 cup Flour
  • 2 tbsp White Sugar
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Salt (omit if using regular salted butter)
  • 1 Egg
  • 2 tbsp Butter, melted
Steps
  1. Combine milk with vinegar in a medium bowl & set aside for 5 minutes to "sour".
  2. Whisk flour, sugar, baking powder, baking soda & salt in a large mixing bowl.
  3. Whisk egg & butter into "soured" milk.
  4. Pour the flour mixture into the wet ingredients & whisk just until lumps are gone.
  5. Heat a large non-stick skillet over MED heat.
  6. Pour ¼ cupfuls of batter onto the skillet & cook until bubbles appear on the surface.
  7. Flip with a spatula & cook until browned on the other side.
  8. Serve up with more butter, honey, jam or just have them on their own!
