Greek Yogurt Waffles

It has taken me 6 years of running my own kitchen to finally get a waffle iron. Yes, people. I finally got a waffle maker.

My problem with kitchen appliances is that I’d want a thing… then I’ll get the thing (not always). And once I have it, I’m satisfied. The issue with this “satisfaction” is that when I obtain the thing, I would hoard it, wanting to keep it in mint condition and hence probably not use the thing for ages.

I’ve had this waffle maker for 3 months and have only just used it. Once. I’m scared of ruining it. Do I have an issue?

It’s not an expensive one but I’m really happy with the waffles it churned out!

My niece & nephew came for a visit so I pulled out the waffle maker for some healthy Greek yogurt waffles. I love how fluffy these are 🙂

I have a question though. These waffles tasted superb the moment they were done. But 3 minutes in, they would soften significantly. Is it because yogurt contains more moisture?

Either way, I always feel that waffles are best when served immediately with a nice drizzle of honey. We never had maple syrup growing up… too expensive. It’s only in the past year have I paid attention and noticed pure maple syrup being sold. Even then, only at specialty stores that sell imported foods. So honey it is for me. Honey forever and ever ♥

These waffles were ever so slightly tangy, very fluffy, perfect receptacle for any imaginable topping.

Greek Yogurt Waffles

Serves: 20 small waffles
  • 2 Eggs
  • 1¾ cup Milk
  • ½ cup plain Greek Yogurt (I used full fat)
  • 1 tbsp Sugar
  • 2 cups Flour
  • 1 tbsp + 2 tsp Baking Powder
  • ¼ tsp Salt
  1. Preheat your waffle maker.
  2. In a medium bowl whisk together eggs, milk, greek yogurt & sugar.
  3. Add flour, baking powder, and salt and mix until all ingredients are combined. (Most of the lumps should be gone but it doesn't need to be perfectly smooth).
  4. Grease the waffle maker (if it's not non-stick) & cook waffles according to manufacturer's instructions. Serve with butter, syrup, fresh berries, whipped cream, or powdered sugar as desired.
