Fajita Spiced Roast Chicken Drumsticks. I mean… That’s basically what this is. I sprinkled some Fajita Seasoning on chicken drumsticks then roasted them. The end.

But you know, I need to always add this and that and make it a bit more complicated than it should have been.

I like to have a sort of veggie base for any chicken roasting. Just to give it some lift (hate trying to scrub sticky chicken bits off a pan!) and also for extra flavour infusion! This little veggie base can also make this a total one pan meal.

A nice squeeze of lemon gives the chicken a bit of a zing. I find that lemon juice mellows a bit after cooking, leaving a sorta sticky glaze around the chicken that I quite like.

Not a very pretty pic or sight but this pan is packed full of flavour! The fajita seasoning already has so much in it: garlic powder, onion powder, paprika and a whole host of other spices.

I served this with a corn salad which I’ll share soon!

Instead of going with the regular rice route, I served this with some sourdough bread. I feel like the tang tied in well with our fajita seasoning and corn salad!

I piled it all up on the bread ala fajita style and dug in!

If you had some tortillas, you could do a regular fajita. I really like the bread to sop up all the fantastic sauce 😀

Fajita Spiced Roast Chicken Drumsticks

Serves: 3 servings
  • 6 Chicken Drumsticks, skin on
  • 1 large Red Onion, peeled & roughly sliced
  • 1 large Tomato, cut into wedges
  • 1 bulb Garlic, broken into cloves
  • 3 tbsp Fajita Seasoning
  • 2 tbsp Lemon Juice
  1. Preheat oven to 180C.
  2. Mix together sliced onion, tomato wedges & garlic cloves with 1 tbsp Fajita Seasoning. Lay on the base of an ovenproof pan.
  3. Sprinkle on remaining fajita seasoning on the chicken drumsticks, making sure to coat them well like a dry rub.
  4. Lay the drumsticks on the onion tomato mix. Drizzle on lemon juice.
  5. Roast the chicken drumsticks for about 45 mins to 1 hour.
  6. Serve immediately!
