Steamed Ladies Fingers (Okra)

Ladies fingers aka okra are Hubs’ favourite veggies of all time. Yes, he likes spinach, he likes veggies in general but ladies fingers? He absolutely loves them. A lot of people are turned off by the slimy insides and I can see why! However, if they are prepared well, ladies fingers would end up being less slimy, crunchy and very fresh tasting! Also, when selecting ladies fingers, I like to go for the smaller skinny ones just so they’re less stringy and woody.

The last time I cooked these, I stirfried them but I wanted to steam the ladies fingers this time around and top them with a simple sauce of dried + fresh shrimp, shallots, soy sauce & sweet soy sauce.

Success! This is so easy to do! While the ladies fingers steam away for 5 minutes, that’s just about the time needed to make the sauce.

That is some good sauce over a top of rice. Sweet-savoury goodness. Did I mention that Hubs loves his rice as well? Which explains why I always cook dishes that go well with rice.

I like to first fry the shallots & dried shrimp till crispy before making the sauce.

By steaming the ladies fingers, they retain their crunch without releasing all that slime (probably because we don’t cut into them and burst their cells a lot). They almost seem like an entirely different vegetable when cooked this way.

How do you prepare ladies fingers? I’ve read that some pickle them or even fry them. I’m so game to try it that way.

  • 15 Ladies FIngers, top cut off
  • 2 tbsp Canola Oil
  • 2 Shallots, thinly sliced
  • 1 tbsp dried Shrimp, rinsed & drained
  • 10-15 small Fresh Shrimp, peeled & deveined
  • 1 tbsp Sweet Soy Sauce (Kecap Manis)
  • 2 tbsp Soy Sauce
  1. Lay ladies fingers on a plate & steam for about 5-8 minutes or until bright green.
  2. Meanwhile, heat up oil in a small pan on MED.
  3. Toss in sliced shallots & dried shrimp & fry till golden brown. Use a slotted spoon to remove friend shallots & dried shrimp, reserving oil in the pan.
  4. Add fresh shrimp & both soy sauces.
  5. Stir around until shrimp is no longer translucent & soy sauce has thickened.
  6. Ladies fingers should be done by now. Top with fried shallots & dried shrimp.
  7. Spoon on shrimp & soy sauce.
  8. Serve hot!
If you cannot find sweet soy sauce, substitute with another ½ tbsp soy sauce & ½ tsp brown sugar.
